🍃 Kombucha SCOBY Rehydration Guide Your freeze-dried SCOBY is currently in a "deep sleep." Follow these steps to wake it up and start your first batch of delicious home-brewed kombucha! "Just Add Tea & Sugar!" Because we provide the active starter liquid, all you need at home is a glass jar, some plain black tea, and cane sugar.
We’ve handled the hard part of the chemistry for you
🛒 What You’ll Need:
- 1 Quart Glass Jar: Sanitized with hot water (no antibacterial soap).
- Sweet Tea: 2 cups of filtered water + 2 bags of black/green tea + ¼ cup cane sugar.
- Starter Tea: Included
- Cover: A coffee filter or tight-weave cloth and a rubber band.
🧪 Step 1: The Rehydration Bath (Day 1) Prepare: Brew your 2 cups of tea and dissolve the sugar in tea. Let it cool completely to room temperature (68-78𝐹). Heat will kill the SCOBY. Combine: Pour the cooled sweet tea and the Pouch of Starter Tea (included in your package) into jar. Introduce: Gently place the freeze-dried SCOBY into the liquid. It may float or sink; both are normal! Secure: Cover with your cloth/filter and rubber band to keep out fruit flies while letting the culture breathe.
⏱ Step 2: The Wake-Up Phase (Days 2–10) Placement: Keep the jar in a warm, dark spot (75–80𝐹 is the sweet spot). Activity: Over the next week, the liquid will turn cloudy, and a new, thin, translucent layer (the "Baby SCOBY") will begin to form on the surface. The Smell: It should start to smell slightly vinegary and sweet.
🥤 Step 3: Your First Real Batch Once you see a new pellicle (skin) about ⅛ inch thick on the surface, your SCOBY is officially awake! You can now use this liquid and the new SCOBY to start a full 1-gallon batch.
⚠️ Important Safety Note: Kombucha should smell tangy and tart. If you see fuzzy growth (black, green, or white) on top, that is mold. Discard the batch and message us for assistance!
